I don't have zucchini often, but when I do it's typically baked into something like cookies or bread. It's not that I don't enjoy the taste, but rather I just find it easier to shred and bake. This recipe was inspired by Italian flavors, but other than that there was no direction in creating this dish. It is a simple, yet flavorful meal (the step that takes the longest is cutting veggies).
Ingredients:
1 zucchini, chopped
1 tomato, chopped
1 onion, chopped
Ground Italian sausage, about 8 oz
1/2 cup long grain white rice, uncooked
2-3 Tb garlic
Italian seasoning
Garlic salt
Pepper
Instructions:
Cook your sausage. Wash rice and cook in a separate pot.
Once the sausage has browned, set aside. Place chopped vegetables and garlic into the sausage pan and simmer until tender.
Add cooked sausage back into veggies and season to taste. If you have marinara or other red sauce, add a spoonful or two for some extra flavor!
Slowly mix the cooked rice together with the sausage and vegetables. Serve while warm. Enjoy!
