Smoked Sausage & Veggies with Rice

There are some days that get so busy it can be difficult to find time to make food. I like this recipe because it doesn't take very long (1 hour at most) to make. The part that took me the longest was probably chopping the vegetables, but if you used frozen vegetables that would make it even quicker! It's a very affordable recipe to make too, and makes a decent amount of food.



Ingredients:

  • Smoked sausage (14 oz pkg)

  • 2-3 cups mixed vegetables (onions, bell peppers, carrots, etc.)

  • White rice

  • Cream of mushroom soup (1 can)

  • Water



Instructions:

Chop vegetables (if needed) and place in a large pot with some olive oil. Cook the vegetables over medium heat until tender.




If adding sausage, chop sausage into coins. Add to pot with the cooked vegetables. Add spices. I used garlic salt, pepper, and paprika. Stir.




Add cream of mushroom soup, 1 cup of rice, and 3 cups water. Stir, then bring to a boil. Cover pot and lower heat to a simmer. Let simmer until rice is done, but check every few minutes and stir. It's important to check this to make sure the rice doesn't get overcooked. Add water if the rice needs more.




Once the rice is done, stir everything once more and serve warm. If you need additional seasonings, feel free to add them. My husband likes putting ketchup on this, so if anyone is brave enough to try that, let me know! I hope you enjoy this recipe!
