Pumpkin Muffins

Makes 12 muffins.


Ingredients:

  • 1 and 1/2 cups pumpkin puree

  • 3/4 cup white sugar

  • 1 egg

  • 1/4 cup melted butter, margarine, or oil

  • 1 and 1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 teaspoon cinnamon


Preheat oven to 325 degrees. Combine the pumpkin, sugar, egg, butter, flour, baking soda, salt, and cinnamon in a bowl. Stir until batter is just mixed.


Grease a muffin tin or use cupcake liners. Using a large spoon, drop batter into muffin tin, about 3/4 full for each one.


Bake the muffins for 30-32 minutes, or until a toothpick comes out clean. Allow the muffins to cool for a few minutes before eating. Enjoy!
