Remember the post about pumpkin puree I made last year? Well, I still have some left! I need to start buying smaller pumpkins or something. These pumpkin doughnuts are a great pumpkin recipe for fall though! They're amazing with a glass of apple cider on a chilly day. This recipe makes about a dozen (12) doughnuts, so invite some friends over for a fall get-together and make these!
Ingredients:
2 cups flour
2 tsp. baking powder
1 tsp. pumpkin pie spice
1/2 tsp cinnamon
1/2 tsp salt
1 cup pumpkin puree
1/2 cup brown sugar
1 egg
1/2 cup milk
1/4 cup butter
1 tsp. vanilla
Instructions:
Preheat the oven to 350 degrees. Grease two doughnut pans (this recipe makes a dozen regular-sized doughnuts).
Stir all dry ingredients together in a bowl. Slowly add the wet ingredients in, and stir until just mixed.
Carefully spoon mixture into the doughnut spaces in the baking pan. If you would rather pipe it in, that works even better.
Once the doughnut pans have been filled, bake the doughnuts for 12-15 minutes.
Let the doughnuts rest for a few minutes before removing them from the pan. Brush each doughnut with melted butter, then generously sprinkle cinnamon-sugar on top. Enjoy!
