Healthy Fruit & Nut Bars

This year, my husband and I made a resolution to eat healthier. It can be difficult to cut out sweeter snacks (especially for me), but when I feel like baking something or want a snack, I like to make these bars. They've got a little sweetness to them, but it's just honey and fruit, no granulated sugar! The texture is more like a cookie than a granola bar, so these can be perfect if you're craving cookies but trying to eat healthier.



Ingredients:

  • 2 cups oats

  • 1 cup flour

  • 2 eggs

  • 1/2 cup milk

  • 1/2 cup butter

  • 1/2 cup honey

  • 1 cup dried fruit (I used chopped dates and craisins)

  • 1/2 cup chopped nuts (I used walnuts)

  • 1 tsp cinnamon

  • 1 tsp vanilla

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt



Instructions:

Preheat oven to 350 degrees.


In a large bowl, mix all dry ingredients together, then slowly start incorporating the wet ingredients. Mix well, batter will be THICK.


Drop the mixture onto a baking sheet. Pat down so the batter is spread evenly.


Bake for 28-30 minutes, or until top is golden brown.
