This combination may seem odd to some at first, and it used to be for me too! I first tried Hawaiian haystacks in college, and now it's become a regular meal in my house. There are a lot of different ways you can make Hawaiian haystacks, but this is the way I prefer mine.
Ingredients:
3/4 cup white rice
2 chicken breasts or 3 thighs
1 (10.5 oz) can condensed cream of chicken
Shredded coconut (sweetened or unsweetened)
Mandarin oranges, drained
La Choy chow mein noodles
Instructions:
Measure out rice and pour into a cooking pot. Rinse your rice (at least once!), this will help reduce the extra starch and clean your rice before cooking. Pour 1 and 1/2 cups of water into the pot with the rice, and cook rice like normal.
While the rice is cooking, cut your chicken into cubes and begin cooking in a large saucepan. Once the chicken is cooked through, add the can of condensed cream of chicken and stir in. Add a little bit of water to the mixture if needed, until you get a sauce-like consistency. Assemble the haystacks in a bowl: first rice, then chicken mixture, crunchy chow mein noodles, shredded coconut, and finish with mandarin oranges. Enjoy!
