When I was in college, I had a friend who did dinner nights with me. One of us would cook dinner once a week, then the next week it was the other person's turn. It was a great way for us to de-stress by getting together to talk over a delicious meal. I think it's amazing how much of a comfort food can be, and how it brings people closer together.
While I didn't make these meatballs as one of my dishes for that friend, I did make these a few times in college. They're fairly simple to make, and don't take a lot of time either. I hope you enjoy the recipe!
Ingredients:
1-2 lbs. ground beef
1/2 cup Italian bread crumbs
1/2 onion, chopped
3-4 cloves garlic, chopped
1/4 cup mozzarella, parmesan, or both
1/4 cup milk
1 egg
1/2 tsp. Italian seasoning
1/4 tsp. salt
1/4 tsp. pepper
Instructions:
Preheat oven to 400 degrees.
Cook onion and garlic over medium heat with some oil until slightly browned. Remove from stove and place in a bowl with the remaining ingredients.
Mix everything together immediately, either with your hands or with a mixing spoon, until well combined.
Take out a baking sheet (I used an 8x8 pan) and line with parchment paper. Form the meatball mixture into golf-ball sized balls and place on baking sheet.
Bake 15-20 minutes. Enjoy!
