There are few things I crave when the weather gets hot, and this pasta salad is one of them! This would be a great dish to bring to a barbeque or a family get-together this summer. But be warned, you should double the recipe to make sure everyone gets enough!
Ingredients:
1 and 1/2 cups garden rotini pasta
1-2 cups cherry tomatoes, halved
1/2 cup black olives, sliced (drained, if canned)
12 oz. bacon, cooked, chopped
1/2 cup shredded parmesan cheese
For the dressing:
3/4 cup mayo
2 Tb olive oil
1 Tb apple cider vinegar
1/2 tsp onion powder
1/2 tsp pepper
Instructions:
Cook the pasta until done, then drain. Add remaining ingredients to the pasta in a large bowl, and stir gently.
Mix the ingredients for the dressing together in a separate bowl. Add the dressing to the pasta mixture. Mix gently until everything is well incorporated.
Cover with plastic wrap and place in fridge for 1-2 hours before serving. Enjoy!
