The most difficult part of making these whoopie pies was trying not to eat the fresh chocolate cookies after they came out of the oven! I've been wanting to make sandwich cookies lately, and these ones definitely satisfied my craving! The cookies are easy to make, and the filling is even easier with less ingredients. If you decide to make these chocolate whoopie pies, I hope you enjoy them as much as I have!
Ingredients:
Cookies:
1/2 cup butter or margarine, softened
1 cup granulated sugar
1 and 1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1 large egg
1 tsp. vanilla extract
1/2 cup cocoa powder
1 cup milk (whole or 2% is fine)
2 cups all-purpose flour
Filling:
6 Tb. butter, melted
1 cup powdered sugar (can add more if needed)
1 cup marshmallow cream
1 and 1/2 tsp. vanilla extract
Instructions:
Preheat oven to 375 degrees. In a medium bowl, mix all cookie ingredients together, in order.
Dollop the cookie dough onto a baking sheet in heaping spoonfuls. Bake for 10-14 minutes. Transfer cookies to a cooling rack.
After all the cookies have been baked, start making the filling. Thoroughly mix all ingredients together in a small bowl. If the mixture still looks greasy, feel free to add a bit more powdered sugar. I added more powdered sugar to mine because I wanted a consistency closer to frosting.
When cookies have cooled completely, use a knife (or spoon) to spread filling onto a cookie. Start with a few tablespoons worth, but if it doesn't look like enough, don't be afraid to add more! Once the filling has been smeared onto a cookie, place another cookie on the top, creating a sandwich. Repeat the process with all other cookies.
Place cookies in an airtight container, separating layers with wax paper. Refrigerate up to a week. They also freeze well for up to a month. Enjoy!
