Chocolate Pudding

Yesterday I tried making mozzarella cheese for the first time, and honestly, the process isn't as easy as it looks. I'd seen several videos on making cheese, so I didn't think it would be very difficult. I ended up making something very crumbly that closely resembled ricotta, but it didn't act like cheese. Anyway, I ended up trying--and failing--to make a quesadilla out of the thing and found out it wouldn't melt like regular cheese, so that was an unexpected fail.


Today I've decided to make something from my favorite category--dessert. I love this chocolate pudding recipe because it doesn't have a lot of ingredients, and it doesn't take long to make. The pudding can be used in other dessert dishes or enjoyed on its own with fruit or whipped cream. Honestly, I think it tastes much better than the boxed version!



Ingredients:

  • 3/4 cup sugar

  • 1/4 cup cocoa powder

  • 1/4 cup corn starch

  • pinch of salt

  • 2 and 1/4 cup milk

  • 1-2 Tb butter

  • 1/2 tsp vanilla


Instructions:

Combine sugar, cocoa, cornstarch, and salt in a saucepan. Mix well. Add the milk and whisk just until combined. Place saucepan over medium heat. Stir continuously to avoid lumps from forming. When mixture is boiling, let boil for 1 minute. Continue to stir constantly.




Remove from heat and stir in butter and vanilla. Allow mixture to cool completely, stirring occasionally.


Serve after pudding has chilled in the fridge, or warm as is. Enjoy!
