To make basic noodles you'll need:
2 cups all-purpose flour
3 eggs
Start by measuring out two cups of flour and drop onto a clean workspace (counter or table). Using your fingers or a spoon, make a well in the middle of the flour pile. You'll want the well to be big so that all the eggs can fit inside without running over.
Once the well is made, crack eggs into the middle. Use a fork to begin slowly stirring the eggs so they mix with the flour.
Once most of your flour has been used and the eggs are less sticky, begin to use your (washed!) hands to finish mixing the ingredients together into a dough. Start kneading the dough until it becomes easier to work with (this won't take long). Flatten dough out on table.
Take your rolling pin and begin rolling the dough out as thin as you can make it. You can flip the dough if needed, and if it gets too sticky just rub some more flour over the sticky parts. It might take a while to get rolled out, but the dough should be about 1/4 inch thick by the time you're finished rolling.
Leave the rolled-out dough on the countertop for at least 6 hours or until (mostly) dry. Don't cut yet!
Cooking the Noodles
After the dough has dried, cut thin strips to form your noodles. These can be thick or thin, there is no wrong way to cut them!
Pour about 5-6 cups of water into a large pot and turn your stove on. I chose canned beef to cook with these noodles, but chicken would also be a great choice. You could also use fresh meat, just make sure it's cooked before continuing.
Add meat to the water in your pot, juices and all. Let that simmer for a few minutes, then once the water is warm, add noodles. For seasonings I added pepper, onion powder, and garlic powder. The canned meat already has a lot of salt in it. The noodles will need 10-15 minutes to cook (medium heat). Stir occasionally to prevent noodles from sticking.
I almost always make mashed potatoes with this dish, they taste really good when mixed! I hope you enjoy making this recipe as much as I did!
