Apple Streusel Cake

It's apple season! What better way to use apples than to put them in a cake? This apple streusel cake is great with a cup of coffee in the morning, and it's not super sweet either. Normally I make a cinnamon crumble cake every once in awhile, but I thought it was time to make something similar as an apple cake. I hope you enjoy this recipe as much as I have!



Ingredients:

For the cake:

  • 2 cups flour

  • 16 oz. apple pie filling (about 1 pint)

  • 1/2 cup buttermilk (soured milk also works well)

  • 1 egg

  • 1/3 cup sugar

  • 1/4 cup brown sugar

  • 6 Tb. butter or margarine

  • 1 tsp. vanilla

  • 1 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1/2 tsp. salt


For the streusel crumble:

  • 2/3 cup flour

  • 1/2 cup brown sugar

  • 1 tsp. cinnamon

  • 4 Tb. butter



Instructions:

Preheat oven to 350 degrees. In a medium to large bowl, add the cake ingredients together, in order, stirring occasionally until just combined.


For the streusel crumble, add all dry ingredients into a small bowl. Add the butter, softened, and use a fork to cut the butter in with the dry ingredients. Once everything is mixed together well and forms a crumble, it's ready.


Grease an 8x8 pan. Pour about half of the batter into the pan. Sprinkle about half of the crumble mixture evenly over the top. Pour (or spoon) the remaining cake batter over top, then sprinkle the last of the crumble topping evenly over the top.


Bake for 32-36 minutes. Let sit for a few minutes before serving. Enjoy!
